Flavor Your Life, a European Union funded campaign dedicated to providing the latest in olive oil industry news, explains the detailed nutritional value and composition of olive oil and why it is a rich source of hard to find nutrients.

Olive oil is the only fat that can be derived from pressed fruit. Reheated or raw, extra virgin olive oil is the most strongly advised fat to include in your diet not only because of its fragrance and rich flavor, but also because it contains monounsaturated and polyunsaturated fatty acids.

Fatty acids are divided into two types –saturated and unsaturated. Eating too many saturated fats, which come from animals and animal products, can contribute to chronic illnesses like heart disease. On the other hand, unsaturated fats are heart and brain healthy. These fatty acids must be taken in balance of each other to optimize heart and brain health.

Olive oil contains an extremely balanced amount of fatty acids. It contains on average 15% saturated fats. Oleic acid is the fat that is most present in our bodies, compared to other mammals. Olive oil has a very well balanced fat content of 73% oleic acid; 9% linoleic acid and 0.3% linolenic acid. Polyunsaturated fatty acids are essential acids that humans cannot produce; they must be brought into the body by diet. Olive oil and fatty fish are rich in this rare, vital nutrient. Olive oil is also rich in vitamins A and E, two antioxidants that also contribute to beauty health.
