Flavor Your Life Discusses 5 Organoleptic Qualities of Olive Oil and Organic Olive Oil

Flavor Your Life, a European Union funded campaign dedicated to providing the latest olive oil industry news, shares some of the organoleptic qualities of olive oil and discusses the importance of knowing the difference between flavors when cooking with extra virgin olive oil.

Flavor Your Life showcases these positive organoleptic qualities of olive oil:

  •     Harmonious- This means that the olive oil’s fragrance and flavor is balanced.
  •     Fruity- The taste of the olive oil should be reminiscent of fresh olives. This does not necessarily mean “fruity” in a sense of “sweet.”
  •     Spicy- A popular quality in Italian olive oil, this is a sharp flavor that you can feel across your whole palate.
  •     Lively- This is a quality that describes an olive oil that has a strong personality, is well defined and is full of good flavor.
  •     Sweet- This is a soft flavor that is pleasant and has a continuous taste.

Carol Firenze, the author of The Passionate Olive, discusses why there is a difference between olive oils and how cooking with an organic olive oil can alter the taste of a dish.

“Keep in mind that all EVOO is not pungent, bitter, dark green or intense; it depends upon the type of olive and mainly when it is harvested,” she says. “A later harvest olive oil (when the olive is black) is milder and an early harvest olive oil (when the olive is green) is more intense in flavor and color. Olive oil comes in mild, medium or robust intensities to suit every taste and food pairing.”
