On August 14, The process of extracting olives for the production of olive oil is distinguished by two forms. There is a traditional and modern method of extraction. Flavor Your Life, a European Union funded campaign dedicated to sharing the latest in industry news about extra virgin olive oil and Tuscan olive oil, shares the benefits of both processes.

The two processes of olive oil extraction are very diverse. The traditional method is often known as the “pressure method” and the modern method is often known as the “centrifugal method.”

The traditional/pressure method has evolved for thousands of years, and is built on pure quality. In modern times, this process is not always able to meet the needs of all users. However, it works as a natural process for small-scale producers who continue to stay traditional. The modern/centrifugal method is a process that extracts olive paste and separates it from its components. This process has become the primary method of olive oil extraction.

The best way to compare the two methods is by looking at the first two steps of both processes. The first step is the defoliation and washing of the olives. In the pressure method, this step is done very infrequently. However, in the centrifugation method it is absolutely necessary to complete both steps. Using a suction process, defoliation occurs and the olives are washed. The washing occurs in water baths that use forced water circulation to ensure maximum cleansing of the olives.

The second step is the crushing of the olives. The pressure method consists of a mill/grinder, in which two wheels are placed and used to crush the olives and produce olive paste.
