"Since my early days as a chef, I've always been passionate about using the freshest quality ingredients from farmers, fisherman and ranchers," says Emeril Lagasse. "I try a little harder every day to think greener and be respectful of our environment and our resources. On 'Emeril Green' we'll unearth how easy and fun it is to cook with what's fresh, tasty and in-season and find smart ways to make each day a little greener for you and your family."

Lagasse began his career working in a Portuguese bakery in Fall River, Massachusetts, attending Johnson and Wales University's famous culinary program. After graduation, he studied the classic cuisine of France and then found himself in New Orleans after stints in New York and Boston, where he became famous for his love of the freshest products. Lagasse is now the chef/proprietor of 11 restaurants across the country. Lagasse has remained devoted as ever to using fresh, top-quality ingredients and employs cottage industry ranchers, farmers and fishermen to ensure that he always gets the best. He constantly invents new recipes, much to the delight of his regular guests and the fans of his Food Network specials and shows Emeril Live and Essence of Emeril.
