At the 2007 International Baking Industry Expo (IBIE) on October 7-10 in Orlando, Florida, ConAgra Mills is showcasing its newest revolutionary ingredient to meet these needs -- Sustagrain(R). Sustagrain is an identity-preserved, waxy, hulless barley variety. It is the first commercially available whole grain product that is high in dietary fiber and lower in starch. Sustagrain can be used not only to boost the fiber, but also to enhance the flavor, texture, appearance and nutritional composition in a variety of applications. Although all grains contain fiber, many grain-based products do not have enough to be labeled a "good source of fiber." So companies are seeking ways to incorporate more fiber into both whole grain and non-whole grain products, and Sustagrain is a great solution.
Sustagrain differs from traditional barley and from oats because of its high fiber content -- it delivers two to eight times the fiber of other whole grains and includes cholesterol-lowering soluble fiber, which makes it a great ingredient for preserving heart health. In fact, the U.S. Food and Drug Administration recently approved a heart health label claim for soluble fiber from barley foods.
The whole grain fiber in Sustagrain is also important for digestive health, blood sugar management and in increasing satiety. King Arthur Flour has three forms of Sustagrain available in two-pound bags: flour, flakes (similar to rolled oats) and steel-cut.
