Organic Buckwheat Hull Pillows – Custom, Made to Order by Crooked Brook

espite the name buckwheat is not a type of wheat at all. It is a flowering plant from the family Polygonaceae and a relative of rhubarb. Buckwheat was domesticated around 6000 BC and was one of the first crops introduced to North America by European settlers. Buckwheat plants are ideal for short growing seasons in areas with low soil fertility. It is also used as a cover crop because it grows quickly and thickly which prevents weed growth.

Buckwheat was an important crop in the U.S. until the demand declined in the 1960's and it is grown commercially for three reasons. Honeybees produce buckwheat honey from the nectar of buckwheat flowers and the health benefits of buckwheat honey are many and well known. However for those seeking buckwheat honey for its health benefits, it must be raw buckwheat honey. Heating buckwheat honey (pasteurization) destroys the all of the pollen, live enzymes, propolis, vitamins, amino acids, antioxidants, minerals, and aromatics. Raw honey is in the same condition as it was in the hive.

Buckwheat seeds are used as a wheat alternative; the seeds do not contain gluten and are often used as a substitute for people with celiac disease or another form of gluten intolerance. The seeds are harvested and eaten whole as ‘groats’ or turned into flour. Japanese soba noodles are made from buckwheat (‘soba’ is the Japanese word for buckwheat).
