Fat molecules are made up of four parts:
a molecule of glycerol (on the right) and
three molecules of fatty acids.

Fats and Oils (Triglycerides)
Fats and oils are composed of fatty acids and glycerol.
Fatty acids have a long hydrocarbon (carbon and hydrogen) chain with a carboxyl (acid) group. The chains usually contain 16 to 18 carbons.
