Dicotyledons usually have more stomata on the lower epidermis than the upper epidermis. As these leaves are held horizontally, upper epidermis is directly illuminated. Less number of stomata on the upper epidermis can then prevent water loss.

The cotyledons may be ephemeral, lasting only days after emergence, or persistent, enduring a year or more on the plant. The cotyledons contain (or in the case of gymnosperms and monocotyledons, have access to) the stored food reserves of the seed.

Number of cotyledons -- The number of cotyledons found in the embryo is the actual basis for distinguishing the two classes of angiosperms, and is the source of the names Monocotyledonae ("one cotyledon") and Dicotyledonae ("two cotyledons").
